Chicken inasal
CHARCOAL-GRILLEDBasted with annatto seed oil and grilled over hot charcoal, never a pan or oven.
Mango salsa

Who we are
We're from Bacolod. We know inasal.
Manukan Country was started by Bacolodnons, and we named it after Manokan Country, Bacolod's famous row of inasal grills. We marinate, baste and grill our chicken the way it's done there: over real charcoal, with our own atchara and mango salsa on the side.
Few dishes, done well.
First time trying inasal?Inasal means "grilled" in Hiligaynon, the language of Bacolod. It's the Philippines' favourite grilled chicken: marinated, basted and charred over charcoal, then eaten with rice and a squeeze of calamansi.
